La parola souffl\u00e9 deriva <strong>dal francese <em>souffler<\/em><\/strong> che significa \u201csoffiare\u201d, proprio ci\u00f2 che accade all\u2019impasto quando \u00e8 messo a cuocere in forno: si \u201cgonfia\u201d. Delicato, saporito ma soprattutto soffice, \u00e8 il perfetto equilibrio tra la fragranza della parte esterna e la cremosit\u00e0 del ripieno che pu\u00f2 essere dei pi\u00f9 svariati gusti (formaggio, verdure, funghi porcini, ma anche yogurt o frutta).<\/p>\n<p>L\u2019idea di portarlo in tavola vi stuzzica, ma siete convinti che sia uno di quei classici francesi difficili e inarrivabili, da non proporre in una cena tra amici perch\u00e9 a rischio flop. Ma ne siete proprio sicuri?<\/p>\n<p>Ecco <strong>qualche suggerimento<\/strong> per preparare un Souffl\u00e9 al Pecorino Toscano DOP senza intoppi, realizzato per noi dagli studenti dell\u2019Istituto alberghiero \u201cLeopoldo di Lorena\u201d di Grosseto. Con questi piccoli accorgimenti, il successo \u00e8 assicurato!<\/p>\n<p><strong>5 regole per un Souffl\u00e9 senza rivali<\/strong><\/p>\n<p><strong>1. La base. <\/strong>La preparazione della base del vostro souffl\u00e9 pu\u00f2 avvenire anche due giorni prima, per consentirvi di ridurre i tempi di preparazione e di cimentarvi, poco prima di servire, solo nella lavorazione degli albumi e nella cottura.<\/p>\n<p><strong>2.\u00a0 La lavorazione degli albumi.<\/strong> Montare gli albumi alla perfezione in una ciotola perfettamente sgrassata, preferibilmente di acciaio o vetro.<\/p>\n<p><strong>3. Gli stampini.<\/strong> Imburrare molto bene gli stampini e cospargerli di pangrattato, che a piacere si pu\u00f2 aromatizzare con delle spezie.<\/p>\n<p><strong>4. Il forno.<\/strong> Rispettare la temperatura del forno: se troppo caldo o troppo freddo, il souffl\u00e9 non salir\u00e0 bene.<\/p>\n<p><strong>5. Il formaggio.<\/strong> In Francia si utilizza il Comt\u00e9, ma la resa \u00e8 eccellente anche con il pecorino Toscano DOP.
