E\u2019 cos\u00ec che, anno dopo anno, sono tornati alla ribalta hobby considerati solo qualche tempo fa demod\u00e9: dal lavoro a maglia all\u2019uncinetto fino al collezionismo.<\/p>\n<\/blockquote>\n<p>La voglia di tornare a \u2018fare con le proprie mani\u2019 \u00e8 arrivata anche in cucina con la riscoperta della pasta fatta in casa.\u00a0Lavorare con le mani in pasta, tra uno sbuffo di farina e l\u2019altro oltre che divertente \u00e8 anche un modo per solleticare i ricordi del passato, legati alla spensieratezza dell\u2019infanzia, quando nonne e mamme, in occasione del pranzo domenicale, portavano sulla tavola piatti semplici e genuini, rigorosamente preparati in casa. La ricetta di oggi \u2018<strong><a href=\"https:\/\/test.pecorinotoscanodop.it\/ricetta\/gnocchi-di-patate-cacio-e-pepe\/\">Gli gnocchi cacio e pepe\u2019 <\/a><\/strong>\u00a0vuole essere quindi un omaggio alla tradizione culinaria italiana e alla semplicit\u00e0 dei sapori di una volta.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-entry_with_sidebar wp-image-3554\" src=\"https:\/\/test.pecorinotoscanodop.it\/fuoridalgregge\/wp-content\/uploads\/sites\/2\/2018\/08\/gnocchi-845x321.jpg\" alt=\"\" width=\"845\" height=\"321\" \/><\/p>\n<ul>\n<li><strong>Gnocchi: lavorateli a mano, ma senza esagerare<\/strong><\/li>\n<\/ul>\n<p>Cominciare \u00e8 semplice, dare la giusta consistenza alla pasta pi\u00f9 difficile. Per iniziare occorre lessare le patate, pelarle ancora calde, schiacciarle e disporle nella spianatoia insieme all\u2019uovo e al sale. A questo punto il composto va lavorato a mano, senza esagerare, fino a ottenere una pasta morbida, facile da stendere con le dita per ottenere dei fili spessi almeno 2 cm. A questo punto lasciate riposare la pasta che andr\u00e0 poi tagliata a tocchetti. Per trasformare un tocchetto in uno gnocco baster\u00e0 far rotolare i piccoli pezzetti sui rebbi di una forchetta e il gioco sar\u00e0 fatto. Fate cuocere gli gnocchi in acqua bollente e scolateli quando verranno a galla. Nel frattempo in una ciotola mettete 4 cucchiai di Pecorino Toscano DOP stagionato grattugiato e mescolateli con due cucchiai di acqua di cottura, fino a ottenere una crema non troppo densa. Scolate gli gnocchi e disponeteli sulla crema di Pecorino Toscano aggiungendo pepe in quantit\u00e0 e il formaggio rimasto.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-entry_with_sidebar wp-image-3553\" src=\"https:\/\/test.pecorinotoscanodop.it\/fuoridalgregge\/wp-content\/uploads\/sites\/2\/2018\/08\/CPT_Il-gusto-di-imparare_Instagram_800x800_2018-03-19_010-800x321.png\" alt=\"\" width=\"800\" height=\"321\" \/><\/p>\n<ul>\n<li><strong>Tre consigli per gnocchi \u2018da favola\u2019<\/strong><\/li>\n<\/ul>\n<ol>\n<li><strong>Cuocete le patate e pelatele subito<br \/>\n<\/strong>Le patate vanno cotte con la buccia, meglio se al vapore, ma senza esagerare. Lessarle troppo significa togliere sapore. Quando saranno cotte sbucciatele subito una ad una, senza passarle in acqua fredda. Per non ustionarvi aspettate qualche minuto, ma non troppo!<\/li>\n<\/ol>\n<ol start=\"2\">\n<li><strong>Impastate senza esagerare<br \/>\n<\/strong>Per ottenere gnocchi morbidi \u00e8 fondamentale che l\u2019impasto sia lavorato poco e velocemente. Pi\u00f9 si lavorer\u00e0, pi\u00f9 collosi risulteranno gli gnocchi in cottura.<\/li>\n<\/ol>\n<ol start=\"3\">\n<li><strong>Non scolateli in pentola, ma con la schiumarola<br \/>\n<\/strong>Dopo averli cotti in abbondante acqua salata, aspettate che salgano a galla, prendeteli velocemente con la schiumarola senza usare il colapasta.<\/li>\n<\/ol>\n<h2>Ami cucinare?
