E ci sono ricette che, con i loro ingredienti, racchiudono territori, persone, tradizioni. Ci siamo concessi questo volo poetico perch\u00e9 oggi vi parliamo degli Gnudi, un piatto tipicamente toscano, ma le cui radici sono particolarmente solide in terra maremmana. Gnudi significa nudi, con quella g che cambia tutto donando a una parola comune l\u2019anima e il carattere della Maremma. Si tratta, in sintesi, del ripieno dei tortelli (anch\u2019essi maremmani) spogliati del rivestimento di pasta sfoglia. Bietole (o spinaci), ricotta, uova, burro un tocco di noce moscata e per finire una spolverata di Pecorino Toscano DOP stagionato. Un piatto semplice, a suo modo povero, ma, come spesso capita per i piatti cosiddetti \u2018poveri\u2019, ricco di gusto e molto nutriente.<\/p>\n<ul>\n<li><strong>GNUDO, semplicit\u00e0 e sostanza<\/strong><\/li>\n<\/ul>\n<p>Anche la preparazione riflette l\u2019essenza semplice della ricetta. Ma andiamo con ordine. Si parte dalla ricotta, da mettere in una <em>boule<\/em> e da lavorare con il mestolo. Poi si aggiunge la bieta, gi\u00e0 sbollentata e tagliata, e si amalgama il tutto con sale, pepe e noce moscata. L\u2019ultimo passaggio \u00e8 preparare con il composto una sorta di polpetta da passare nella farina prima di cuocerla a 90\u00b0C. Una volta scolata e sistemata nel piatto, cospargiamo tutto con burro fuso aromatizzato alla salvia. Per il tocco finale arriviamo noi. O meglio arriva il nostro Pecorino Toscano DOP stagionato, che possiamo grattugiare con generosit\u00e0 sopra i nostri gnudi.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone wp-image-1221\" src=\"https:\/\/test.pecorinotoscanodop.it\/fuoridalgregge\/wp-content\/uploads\/sites\/2\/2017\/06\/CPT_Pecorino-Toscano_TIPS_Instagram_800x800_2016-04-27_08-800x321.png\" alt=\"\" width=\"850\" height=\"341\" \/><\/p>\n<ul>\n<li><strong>Il Pecorino Toscano DOP grattugiato<\/strong><\/li>\n<\/ul>\n<p>L\u2019ultimo passaggio della nostra ricetta ci offre l\u2019occasione di parlare di un uso apparentemente \u2018secondario\u2019 del Pecorino Toscano DOP, eppure molto importante soprattutto per piatti tipici della tradizione come, appunto, gli Gnudi.\u00a0 Si parte dal Pecorino Toscano DOP stagionato, che deve maturare per almeno 120 giorni, ma pu\u00f2 stagionare benissimo fino a un anno. Un formaggio molto adatto a chi cerca gli aromi e i profumi che si sviluppano con la stagionatura.
