Dopo averlo guardato, toccato e annusato, \u00e8 giunta l\u2019ora di attivare le papille gustative per riconoscere i sapori e le sensazioni che ogni morso pu\u00f2 sprigionare&#8230;<\/p>\n<\/blockquote>\n<p>Il nostro viaggio sensoriale nella degustazione dei formaggi continua con la tappa dedicata al gusto, un senso strettamente collegato all\u2019olfatto per riconoscere al meglio ci\u00f2 che mangiamo e sentire i sapori fino in fondo.<\/p>\n<ul>\n<li><strong>Intensit\u00e0 dei sapori e degli aromi<\/strong><\/li>\n<\/ul>\n<p>Uno dei primi aspetti gustativi \u00e8 l\u2019intensit\u00e0, elemento importante per quantit\u00e0 e qualit\u00e0 al fine di valutare la persistenza e la consistenza di un formaggio quando lo mettiamo in bocca. Attivando le papille gustative possiamo capire se un formaggio \u00e8 dolce o salato, acido o amaro, e possiamo anche percepire gli aromi che ogni fetta contiene, tenendo allenato anche il naso per un\u2019analisi gusto olfattiva. E\u2019 importante, infatti, prestare anche la giusta attenzione a come conserviamo, tagliamo e proponiamo le fette, piccole operazioni da compiere nel modo giusto per non far perdere al formaggio le sue caratteristiche e gustarlo al meglio.
