Scopriamo insieme la ricetta del giorno&#8230;<\/p>\n<\/blockquote>\n<p>Con questo spirito aperto alla cucina internazionale oggi, anche grazie alla collaborazione con Gianluca di Buone Ricette, vi proponiamo i <strong>R\u00f6sti,<\/strong> \u2018piatto simbolo\u2019 della <strong>Svizzera,<\/strong> arricchiti con il Pecorino Toscano DOP.<\/p>\n<ul>\n<li><strong>Cosa sono i R\u00f6sti<\/strong><\/li>\n<\/ul>\n<p>Se siete stati in Svizzera avrete sicuramente assaggiato i R\u00f6sti, piatto povero della cucina del <a href=\"https:\/\/it.wikipedia.org\/wiki\/Canton_Berna\">Cantone di \u00a0Berna<\/a>, oggi diffuso in tutto il Paese e considerato uno dei <strong>piatti nazionali<\/strong>. A base di patate grattugiate mescolate con\u00a0<a href=\"https:\/\/it.wikipedia.org\/wiki\/Burro\">burro<\/a>\u00a0o olio, o in alternativa grattugiate e poi fritte leggermente in olio, i R\u00f6sti hanno la forma di dischi dal diametro di 5-20 cm e alti 1-2 cm. Alla ricetta base possono essere aggiunte a piacere\u00a0<a href=\"https:\/\/it.wikipedia.org\/wiki\/Cipolla\">cipolle<\/a>,\u00a0<a href=\"https:\/\/it.wikipedia.org\/wiki\/Pancetta\">pancetta<\/a>,\u00a0<a href=\"https:\/\/it.wikipedia.org\/wiki\/Formaggio\">formaggio<\/a>,\u00a0<a href=\"https:\/\/it.wikipedia.org\/wiki\/Erbe_aromatiche\">erbe aromatiche<\/a>\u00a0o anche\u00a0<a href=\"https:\/\/it.wikipedia.org\/wiki\/Mela\">mele<\/a>.<\/p>\n<ul>\n<li><strong>Come cucinare i R\u00f6sti perfetti<\/strong><\/li>\n<\/ul>\n<p>Prima di tutto scegliete <strong>patate a pasta gialla<\/strong> e di una qualit\u00e0 adatta a essere cotte in forno o in padella. I R\u00f6sti, infatti, possono essere preparati sia con patate <strong>bollite o crude<\/strong>. Se volete <strong>R\u00f6sti pi\u00f9 morbidi<\/strong>, fate bollire le patate. Al contrario, se preferite una <strong>consistenza pi\u00f9 decisa<\/strong>, \u00e8 fondamentale tagliare con la grattugia a maglie larghe le patate, senza tritarle o frullarle. In questo caso, dopo aver grattugiate le patate, procedete a grattugiare anche il Pecorino Toscano DOP. Mettete una padella sul fuoco con una noce di burro e, quando il burro si \u00e8 sciolto, create un disco con le patate grattugiate e disponete un secondo strato di Pecorino Toscano DOP. Per un risultato pi\u00f9 preciso, aiutatevi con un ring del diametro di 8 cm. Cuocete a fiamma media per 7-8 minuti per lato.
