Pecorino Toscano PDO
Sheep’s milk
The unique flavour of Pecorino Toscano PDO is due to the milk. This is exclusively sheep’s milk from flocks reared in the area defined by the Protected Designation of Origin. The sheep are grazed extensively on soils rich in herbs and essential oils and these give the cheese a unique flavour. In addition to benefiting from being able to graze in the open, Pecorino Toscano PDO sheep are fed with a high percentage of green fodder, rich in tocopherols and carotenes, which increases the amount of Vitamin A and Vitamin E in the milk. Compared to other Italian cheeses made from sheep’s milk, Pecorino Toscano has a milder and more well-balanced taste. When compared with cheeses made with cow’s milk or a mixture of milks, it has a stronger taste — though never too strong.
