We would like to wish you all a year as unique and particular as the traditional and creative hallmark recipes flavors, prepared by the students of Grosseto’s Hotel Management School “Leopoldo II di Lorena”, are.
For this reason, a partnership has been launched between the school and the Pecorino Toscano PDO Protection Consortium. Its main aim is to foster our territory’s cheese production, and to stimulate its consumption, which will be done by raising awareness about the PDO’s quality. The PDO (Product Designation of Origin) label guarantees the added value of every shape and slice. Therefore, we’ve been promoting its knowledge and professionalism heritage, with many initiatives in order to confirm the Pecorino Toscano PDO as one of Tuscany’s main agrifood excellences and amongst its ambassadors in Italy and across the world.

A ‘pocket’ cookbook with 18 recipes developed to bring out the best flavor and scent of Pecorino Toscano PDO: from pasta and meat dishes, to side dishes and desserts. Some of these recipes are from Tuscan cuisine, others are the result of the chefs’ creativity who wanted to reinvent our cuisine, without straying from the authentic tastes of the territory. Simple recipes to enjoy and help appreciate all 360 degrees of Pecorino Toscano PDO: natural, processed, mixed, blended, fried, spiced or even grated.

Never Say Never Recipe Book, ideas from the food blogging

Here are twenty-four unpublished dishes to taste Pecorino Toscano PDO combined with “unimaginable” ingredients.This is the essence of #maidiremai. The cookbook was put together by 24 food bloggers who competed in the challenge organized by the Pecorino Toscano PDO Protection Consortium in collaboration with the Italian Association of food bloggers. Pecorino ice cream, Mediterranean fish and chips, chocolate puffs with double Pecorino cream, and chickpea dumplings stuffed with pecorino are just some of the dishes that you’ll find in the cookbook. Each recipe gives you instructions on how to prepare the dish, including photos taken by the food bloggers, whose culinary creations you can follow on their blog.
