Protected Designation of Origin (PDO) is the best guarantee of excellence of a European agri-food product. Every form of Pecorino Toscano PDO is controlled at source and complies 100% with the production regulations. The logo is applied in ink to soft cheese and heat-branded onto aged cheese. On pre-packaged portions each individual pack is marked, as long as it takes place in the area of origin. Pecorino Toscano PDO cheese must bear the label approved by the protective consortium, the mark of origin, which includes the identification number of the producing dairy, and the logo guaranteeing compliance with the regulation.
