We’re always learning more about Pecorino Toscano PDO and working to improve each stage of the production chain. To reach these goals, for years, we have involved the scientific and academic world, setting up partnerships with researchers and universities, among these including the University of Pisa, Florence and Parma, in addition to the School of University Studies and Sant’Anna Master’s School in Pisa. Through these partnerships we have been able to learn more about Pecorino Toscano PDO and to lay the foundations for a better product.
Thanks to this attitude, we have delved into scientific research, which we have applied to our cheesemaking factories. Doing so has improved the quality of our cheese and boosted its nutritional value, starting with, for example, low cholesterol.
