Our lands

Our cheese has its roots in history and in the deep ties between the environment, sheep and shepherds. In Tuscany, pastoralism, one of the most ancient forms of farming and using the land, has centuries-old roots resulting in a dairy tradition which has been handed down from generation to generation and in a cheese considered to be one of the best Italian delicacies. Pecorino Toscano PDO is unique because of the extremely close ties between the geographical environment and the characteristics of the milk to be processed, and because of the production methods, which combine craftsmanship and innovation. The characteristics of the land in which our sheep graze give the milk that sweet, delicate and balanced taste which means that Pecorino Toscano PDO is not just “one of the herd”.

The land of origin. From farming to milking, from production to ripening, everything must take place, as required by the Pecorino Toscano PDO production regulations, in the area of origin. This includes all of Tuscany, the municipalities of Allerona and Castiglione del Lago in Umbria and those of Acquapendente, Onano, San Lorenzo Nuovo, Grotte di Castro, Gradoli, Valentano, Farnese, Ischia di Castro, Montefiascone, Bolsena and Capodimonte in Lazio. The different climate conditions and the dairy traditions of each territory give Pecorino Toscano PDO a variety and nuances of flavours and aromas.
