Rocca Toscana Formaggi unites the experience of the Tuscan Canti family, who have been operating in the food sector for over sixty years, with the skill of the former Caseificio di Roccastrada’s dairy workers. The company has a production site, ripening sites (including a volcanic lava cave and a sandstone pit) and a vacuum packaging site. In addition to fresh and aged Pecorino Toscano PDO and an organic version, the company produces its own pecorino, “Il Vessillo”, which is finished with specific ingredients (pepper, walnuts, olives, wheat) and a variety of pecorino cheeses with innovative, patented recipes in which the ingredients, pears, figs, honey, Chianti D.O.C.G. wine, truffles, grappa, Bronte PDO green pistachios and saffron, are mixed in the boiler. In its daily work Rocca Toscana Formaggi updates the ancient art of cheesemaking, combining tradition with the search for new flavours.
